Chicken Thighs Stuffed with Mushrooms and Onions

Ingredients
- 6-8 chicken thighs, boned, skin on, filleted, pounded flat
- 1/2 lb mushrooms, small chop
- 1/4 lb mild white cheese, grated
- 1 C onion, small chop
- 1 t paprika
- 3 cl garlic, minced
- 4 oz butter
- 1/2 t thyme
- 1/2 C parsley, chopped
- 2 t soy sauce
- 1 t honey
- 1 t sweet chili sauce
- 1/2 t tumeric
Instructions
- Mix together 1 t salt, 1 t paprika, fresh ground black pepper, 3 cloves minced garlic, and 2 T olive oil. Coat the flesh-side of each thigh with the mixture, stack the thighs flesh-to-flesh, let sit 15 minutes.
- Fry the onions in butter and oil until translucent. Add the mushrooms and continue cooking until the mushrooms are tender. Add the thyme, then season to taste. Remove from heat, then mix in the cheese and the parsley.
- Place 1 large spoonful of stuffing in each thigh, pin if necessary with a toothpick, then roll up and place the thigh in a baking dish lined with parchment paper. Bake at 375 for 20 minutes.
- Mix together the soy sauce, honey, sweet chili sauce, and turmeric. Baste the thighs with the sauce, then return to the oven for 10 minutes.
- Plate and serve hot.
